About us
We are second-generation Peruvian Canadians! My brother, Javier Carol and I own and operate Los Chicos Brasa Markham.
Our family learned the shared values and achievements of cultural groups in Canada primarily through our love of food. If we weren't in Vancouver indulging in Cantonese wonton soup on Pender Street or Frybread in the Okanagan Valley, then we were in Toronto enjoying Greek Dolmadakia on the Danforth and Jamaican beef patties on Eglinton West. Our local restaurant industry gave us an accessible introduction to new cultures by immersing us in spaces curated to express the owner's spirit through flavour, ambience, and conversation.
An introduction we always felt was missing for the Peruvian Canadian community while we were growing up in the 80's and 90's. Providing this introduction is a big part of why we decided to share Peruvian flavours and cooking traditions in the city of Markham. We want our children to see our Peruvian culture living and breathing in our local communities.
Pollo a la brasa authentically made from an ecological rotisserie charcoal oven, Aji Amarillo in a creamy Huancaina sauce, Rocoto peppers in a spicy Leche de Tigre, Aji Panca on flame-grilled Anticuchos and Pisco Quebrante in a smooth and silky Pisco Sour. Our Peruvian culture is reflected in our ingredients, cooking technique and equipment, music, drinks, custom art, and business values---the very principles that guide how we treat our guests, team members, vendors, and local community.
We are driven by the admiration we have for our parents migration journey to Canada, our pride for our Peruvian heritage, our duty to create generational wealth, and a chip on our shoulder that wants to tell Canada: we are here.
